Japanese Dinner

My friend Kiyomi invited me and 2 other women to her home for an authentic Japanese dinner.  She prepared a dish that she had learned to cook from her mother.  It was delicious and contained ingredients that I have never heard of such as lotus root.

The base was sushi rice and was topped with shrimp, squid, lotus root, bamboo shoots and some other things.  The yellow strips were made of egg and then topped with ginger.

The soup was a delightfully seasoned broth with so.me vegetables.  But I've already forgotten what was in it.

About Me

We retired after years of being in the computer support business, Jane with Brulin Corp and John with Unisys. We tried tent camping but finally settled on RV living. While we are part timers now, we hope to move to becoming full-timers eventually. John works on his HO model of Ellis, KS UP railroad and Jane persues her search for used books to read and sell on Amazon. We winter in Apache Junction, AZ and summer in Indiana.
